Each YOSAKURA location selects Japanese rice from different regions to match its cuisine. Rather than using a single variety, we carefully select the rice that best complements each dish. At some locations, rice is cooked using a traditional Japanese pot called a Hagama, which is rarely used today due to the time and skill required. By holding and distributing heat throughout the pot, the Hagama brings out the rice’s natural sweetness, aroma, and clear grain texture.
